Hello Happy Overnight Zucchini Oats

Yes I did say zucchini hehe! I love adding random veggies into my meals to make then more wholesome and nourishing, so why not add veggies to my morning oats!

Ingredients
1/3 cup of almond meal for paleo or gluten free oats (you can also use rice flakes or quinoa flakes)
1/4 cup of grated zucchini (squeeze in a paper towel to get rid of excess water)
1/3 cup of nut milk

Now to the fun part... choosing your extras.

Here are my faves:
1 tbs of chia seeds
1 tbs of cacao powder
1 serving of protein powder
1 serving of collagen
1 tsp of maca powder
Handful of nuts
1 chopped date or goji berries

Method
Add all your ingredients into a container or jar, combine and leave in fridge overnight. When you are ready to enjoy, top with some fresh fruit, coconut yogurt or rawnola! Delicious!! @pinterest

Strawberry Super Bites

Strawberries Super Bites! Nutrient-dense, delicious snack perfect for a mid-morning or afternoon pick up or a sweet treat after dinner!

Ingredients
1/2 cup of nut butter (I used almond butter)
1 tsp vanilla extract
Pinch of salt salt
1/2 cup almond flour
1 tbsp chia seeds
1/4 cup organic dried strawberries from @thesourcebulkfoods
Dash of almond milk (more or less depending on how dry your mixture is)

Method
Mix nut butter, vanilla, coconut and salt in a bowl until well incorporated. Add flours and mix in, Add the chia and strawberries and mix into a soft dough Roll into balls using hands or use cookie scoop to shape. Store in the fridge for up to a week and freeze for a month, that's if they can last that long hehe ! P.s. you can mix ingredients in a blender too!

Hello Happy Turkey Fajitas

Turkey Fajitas (easy paleo swap use lettuce cups instead of wraps!) This is such an easy peasy mid week recipe!

Ingredients
Serves 2 500g boneless turkey breast tenderloins, cut into thin strips
1 tablespoon coconut oil
2 medium green, red or yellow capsiums, cut into 1/4-inch strips
2 carrots, diced finely
1/2 medium onion, thinly sliced
1 garlic clove, minced
1 teaspoon ground cumin Salt & pepper
1 teaspoon cayenne pepper
1/2 cup coriander, roughly chopped
Juice of 1/2 a lime
6 tortillas, my fave is non GMO @latortilleriaau GF corn tortillas.

Method
In a large nonstick pan, saute turkey in oil for 2 minutes. Add the capsium, carrot, onion, garlic, salt, cumin, pepper and cayenne. Cook and stir for 5 minutes or until turkey is no longer pink and peppers are crisp-tender. Stir in coriander and lime juice; cook 1 minute longer. Serve in tortillas or for paleo use lettuce cups with some fresh avocado! Let me know if you make this super delicious and nutritious dinner! I def recommend you make extra for lunch the next day!
