Creamy Coconut Hot Chocolate to finish a chilly winter day in Melbourne!
1 3/4 cup coconut milk (I used @pureharvest cocoquench)
Sweetener of choice to taste eg stevia or monk fruit
2 tbs of cacao powder
1/4 tsp ground vanilla or extract
Combine all the ingredients into a saucepan over medium to high heat, using a whisk to break up any clumps. Keep stirring until smooth and warm, then pour into a mug and serve warm. Delicious!
Note: I recommend not having this drink too late in the day, as cacao is a stimulant and can interfere with your sleep.
