Green Pancake

Packed full of spinach, but you cannot taste it in the pancakes! Add to your daily veggie intake without even trying. Plus, they are absolutely delicious, dairy-free, sugar free AND gluten-free! Perfect for brekky or if you're like me, you eat eggs for dinner!

Ingredients
4 eggs
1 tsp @melrosehealth essential GREENS powder (optional)
1 tsp gluten free baking powder
1 tbsp of almond meal
3 cups spinach, organic if possible as in the 'dirty dozen' of top foods laden with pesticides
1/2 tsp quality rock salt
1 tbsp dehydrated bone broth

Method
Blend ingredients and mix until smooth consistency. Pour batter in preheated greased pan, and cook until bubbles on surface before flipping. Be careful not to burn. Remove when both sides golden brown.

Hello Happy Raspberry Choc Chip Protein Bars

Healthy Protein bars are so great for grabbing on-the-go, and this deliciously sweet Raspberry Choc Chip Protein Bars!

Ingredients
1 Egg (or if vegan 1 flax eggs)
1 cup mashed banana about 2 large bananas
¾ cup almond meal
1 teaspoon ground cinnamon
1 teaspoon baking soda
Pinch of salt
A serving @incaorganics clean protein powder
¼ cup frozen raspberries
1/4 cup cacao nibs or @lovingearth dark chocolate
Splash of @pureharvest almond milk or water


Method
Preheat oven to 180*C.
In a small bowl, whisk eggs or make flax egg.
Combine all the ingredients (except for the raspberries & choc chips) in a large mixing bowl.
Gently fold the raspberries and choc chips into the mixture. VERY gently so the berries don’t bleed into the batter.
Transfer into a baking tray and bake in the oven for 55-60 minutes or until golden brown and centre is cooked through. Remove from pan and allow to cool before cutting into squares. Enjoy 💗

Strawberries Super Bites! Nutrient-dense, delicious snack perfect for a mid-morning or afternoon pick up or a sweet treat after dinner!

Ingredients
1/2 cup of nut butter (I used almond butter)
1 tsp vanilla extract
Pinch of salt salt
1/2 cup almond flour
1 tbsp chia seeds
1/4 cup organic dried strawberries from @thesourcebulkfoods
Dash of almond milk (more or less depending on how dry your mixture is)

Method
Mix nut butter, vanilla, coconut and salt in a bowl until well incorporated. Add flours and mix in, Add the chia and strawberries and mix into a soft dough Roll into balls using hands or use cookie scoop to shape. Store in the fridge for up to a week and freeze for a month, that's if they can last that long hehe ! P.s. you can mix ingredients in a blender too!

Veggie Berry Bliss Smoothie

My meal in a cup today! Veggie Berry Bliss smoothie. Includes PROTEIN, FIBRE, FAT & GREENS to balance blood sugar and keep me satisfied! Serves 1

Ingredients
1/2 cup of bluberries
1/2 cup of almond milk (I used @pureharvest)
1 serving of protein powder (I used @incaorganics)
1 serving of collagen (I used @greatlakesgelatin)
1 tbsp of almond butter (or your fave nut butter)
1/2 cup raw or steamed frozen cauliflower
1/2 - 1 cup fresh or frozen spinach

Method
Blend and decorate with some toppings! What's your fave smoothie ingredient!
