2 teaspoons coconut oil
5 large eggs, whisked
50g of Smoked Salmon
A handful of pitted olives, roughly chopped
A handful of sun-dried tomatoes
½ cup of spinach, chopped
3 mushrooms, chopped
Salt & Pepper
Sprinkle of chilli flakes
Optional: Crumbled goats cheese or cashew cheese
Preheat oven to 180c and grease a tin with coconut oil
Add half of the ingredients into the greased tin then add whisked eggs with salt and pepper. Layer remaining ingredients, sprinkle with chilli flakes and add crumbled goats or cashew cheese.
Bake for 15-20 minutes or until golden brown. Allow to cool then slice into pieces for brekky, lunch or snack. ENJOY.
