1/4 cup coconut oil, melted
¾ cup walnuts, roughly chopped
1 cup ground almonds
Pinch of sea salt flakes
Generous pinch of ground nutmeg
1 - 2 tsp ground cinnamon
¾ cup flaxseeds or golden linseeds
2 tsp vanilla extract
2 tsp baking powder (aluminum free)
2 - 3 banana, mashed (as ripe as possible)
**If mixture is too thick, add a splash of almond milk.
Option: If you want to jazz it up a little, add a handful or so of whole nuts, other seeds, or some chopped up medjool dates to add more texture and flavour!
Add ingredients into a large bowl, mix lightly and pour into muffin tray (either lightly grease with coconut oil or put a bit of baking paper. Bake in preheated oven at 180 degrees fan forced for 30-40 minutes or until golden brown and firm to the touch!
