1 - 2 fillets of salmon or 1 ½ cups of canned salmon (if canned choose high quality)
1 - 1 ½ cups grated zucchini - ** make sure you squeeze the juice out of the zucchinis with paper towel!!
⅓ cup of spring onions, finely sliced
1 eggs, lightly beaten
1 - 2 tbsp of nutritional yeast
2 tbsp fresh coriander, finely chopped
½ a cup almond flour (add more or less depending on consistency of mixture)
salt & pepper to taste
1 - 2 Tbsp. coconut oil for pan
If you using fresh salmon, drizzle the salmon with a some coconut oil and generously season with salt and pepper. Cook for 10-13 minutes, or until just cooked through in oven. Meanwhile, grate zucchinis and using your hands, squeeze out as much liquid as possible. In a large mixing bowl add all the ingredients with the salmon and mix together. Heat up a frying pan with coconut oil on medium-high. Form patties with the mixture and place in the skillet to golden brown brown (approx. 10 mins). ENJOY!
