Hello Happy Veggie Frittata


Frittata's I reckon are my favourite go to meals! Not only are they super delicious but you can jam pack soo many goodies into them plus they are perfect for breakfast, lunch & dinner.

1 cup almond milk
1/2 cup nutritional yeast
2+ cups veggies (whatever you have on hand eg broccolini, cauliflower, spinach, pumpkin etc) RAW or leftover cooked
1 tbs coconut oil for frying veggies
Herbs & spices of choice eg chilli, cumin, ginger, salt salt salt salt
1 tbs bone broth (I use @nutraorganics)
10 eggs

Preheat oven to 180 degrees celcius.
Pan fry veggies in coconut oil until cooked (if using spinach add this raw at the end). Separately, add all other ingredients and whisk lightly. Pour egg mix into veggies and pop pan in oven (if you can, use a pan that can go on the cooktop and in the oven, otherwise use a different pan for the veggies).
Cook for 20 minutes or until cooked through, so the egg is set and lightly browned on top.

Enjoy! This is a great meal to make using already cooked veggies as well.
