1 cup of blanched almond meal
3 Medjool dates pitted
¼ tsp fine sea salt
½ tsp vanilla extract or vanilla powder
2 Tbs coconut oil
⅓ cup of dark chocolate, chopped into small bits or cacao nibs
I added a serving of vanilla protein powder!
Place the almond meal, dates, salt, vanilla, and coconut oil into a food processor/blender until it resembles fine crumbs in a food processor. Pour mixture into a bowl and add chopped chocolate. Mix through with your hands. Press dough together to form balls, and set on a plate. Refrigerate until firm. Enjoy as a mid-morning/afternoon snack or dessert!
